A spiced apple base covered with a light vanilla sponge

Ingredients

  • 175 g Self raising flour If using plain or all purpose flour add an extra 1½tsp baking powder

  • 120 g Granulated sugar

  • 175 g Vegetable or Sunflower oil

  • 4 large eggs

  • 1 tsp Baking powder

  • ¼ tsp Salt

  • 1 tsp Vanilla extract

  • 1 tsp ground Cinnamon

  • 1 tsp ground Nutmeg

  • 60 g butter: cubed

  • 6 Medium size apples

  • 2 tbls Lemon juice

Directions

  • Preheat oven to 175°C/350°F/Gas mark 4.
  • Lightly grease the baking dish with a little butter
  • For the Apple base
  • Peel and core the apples and cut into small cubes, place into a large bowl and add the lemon juice. Give the apples a good mix to make sure they are well coated in the lemon juice
  • Place the apples into the baking dish and spread out evenly over the bottom
  • Evenly spread the butter cubes over the apples and set aside
  • For the sponge topping
  • Place the eggs into a large bowl and whisk them until completely broken up
  • Add the oil and completely combine
  • Add the vanilla extract and sugar and give the mixture a good whisk
  • Sieve in the flour, baking powder and salt then whisk together until you have a nice smooth batter
  • Pour the batter over the apples and smooth out evenly with a spoon or silicone spatular.
  • Be sure to spread the sponge batter to reach all corners and sides of the dish
  • Place in the oven and bake for 50 mins or until the sponge has risen, is a nice golden brown and a thin skewer/cocktail stick comes out clean when inserted in the middle
  • Serve hot with Creme Anglaise and enjoy!
