    Ingredients

    • Soft Butter – 230g
    • Muscovado Sugar (You can also use caster sugar) – 230g
    • Self-Raising Flour – 230g
    • Baking Powder- 1 ¾ teaspoon
    • Eggs – 4 Large eggs
    • Instant Coffee – 5 teaspoons (instant coffee should be dissolved in 1 tablespoon of boiling water)

    Topping Ingredients

    • Instant Coffee – 5 teaspoons (instant coffee should be dissolved in 1 tablespoon of boiling water)
    • Icing Sugar – 360g
    • Soft Butter 180g

    Instructions

    1. Adjust the temperature settings on your oven and let it preheat to 180C.
    2. Take two 20 cm deep sandwich tins and butter the base of both tins. Just be careful not to add too much butter.
    3. Use baking paper to line both tins.
    4. Add the instant coffee to boiling water. Keep stirring until a good number of granules have already dissolved.
    5. Now take all the ingredients and mix them together; however, leave instant coffee out at this time.
    6. When the mixture starts to get smooth, add the dissolved coffee from step 4 and keep stirring.
    7. Once the mixture has completely blended, pour it into the two tins.
    8. Place both tins in the oven and bake them for 25 to 35 minutes. Don’t take the tins out without checking if the sponge is completely cooked or not. You can do it by sticking a toothpick in and seeing if anything comes out with the toothpick. If not, then the sponge is cooked from the inside.
    9. Now make a mixture with the topping ingredients mentioned above. i.e. Icing sugar, butter and instant coffee.
    10. Add this mixture between the two sponges, and then cover the top sponge with the same mixture. Make sure the entire top is covered but don’t use the mixture on the sides of the cake, as it might not stick.
    11. Let it rest for some time, and then serve it to your guests.
